Why lime-mint works so well

Lime is the tarter, greener sister of lemon – on its own it can taste sharply bitter. Mixing it yourself: the right ratio

60/40 in favor of lime is the starting point: the lime leads with its green acidity, the mint cools the finish. For maximum mojito character you can go toward 50/50 – even more mint tips the mix into menthol territory. If the lime is too tart for you, swap part of it for lemon and land on the milder Lemon-Mint-classic.
