Tarragon is a culinary herb with an unusual dual character: sweetish-anise up front, green and slightly peppery behind that, almost a little cool in the finish. If you know the flavor from the drinks aisle, you'll immediately think of Tarhun – the bright green tarragon lemonade that has cult status in Eastern Europe and gave the aroma its reputation as a "green soda".
